I'm Zahch Israel, Longview native, Hallsville graduate, and co owner of Ollie’s Skate Shop and we just opened Solo Sandwich Co.
The way that I wanted the product to be resented was a good, healthy option, but without telling you that it was vegan or vegetarian or “this has this many calories”. I developed a model that would just put all the ingredients on the tag and let you decide what's safe for you and what fits your current diet.
I didn't want to scare away anybody with our menu, so I tried to keep the menu simple, but fresh with fun ingredients and a twist on something that you classically see. We were trying to make a sandwich for everybody and I think we've done that with our menu.
We'll keep a core menu so that way you'll know that you can always come in and get that sandwich, but know that there's going to be some fun and interesting weekly specials to try whenever you come in. That's just something that the chef and I will make up, usually almost on the spot, with ingredients that we find at the farmers market on a Saturday morning. That's how you'll get a different sandwich.
The name Solo Sandwich Co. came from a play on the NorCal or Boho vibe, so “SoLo” like “South Longview”.
